-you go to a mid/big tech company
-you start your own company
-you go back to consulting
You should do your best to forecast where this company can go. If you don't think the business model is viable or able to attract investment, run away as fast as possible. If you believe in it, give it a shot. It will help you grow in your career and has lots of upside. Worst case scenario you get a different job.
Another thing to consider is in ones career it isn't just about this role, but the next. Which role sets you up for where you are going. I've never gone to another company without considering these things.
If you have the opportunity to join as a COO, I would go for it. There’s much more upside than if you’re a chief of staff or consultant. You can always come back to consulting
