We had rice with it, really delicious. It’s a classic Cantonese style preparation found in a lot of Chinese restaurants.
Preparation is quite simple, clean the fish well, cut 3 slits on both sides of the fish, stuff ginger slices into the slits. Salt both side as well. Then just steam it on a large wok or skillet, covered, in medium heat for about 10 mins.
After steaming, remove the fish to a clean plate, garish with scallions and ginger, then drizzle hot veggie oil on top of the garish, finish with seasoned soy sauce.

You can use the same recipe for any kinds of fish, although some will taste a bite better than others. The key is to not over cook the fish. Medium heat.
