Awh love it!! That looks delicious. I could really go for a fruit tart right now haha. I haven't started watching the Olympics much yet but maybe that's how I'll spend my Sunday afternoon! Thanks for the inspo!

Oh my gosh this looks seriously delicous OP. Do you have a recipe for how you made this? I wish I had done something like this today but we did a lemon cake instead. It was really good and very light but didn't have enough fruit on it.

Pie crust was store bought but heres the filling recipe:
1/2 c. heavy cream
8-oz mascarpone cheese
4 oz. cream cheese, softened
1/2 c. powdered sugar
Juice of 1/2 lemon
1/2 tsp. almond extract
In a medium bowl use a hand mixer to beat heavy cream until stiff peaks form. In another large bowl, beat mascarpone and cream cheese until smooth. Add powdered sugar, lemon juice, and almond extract and beat until no lumps remain. Fold in the whipped cream gently. Don’t mix. You want it incorporated but you don’t want to lose all the air out of the whipped cream. Spread it on the pie crust and refrigerate for at least an hour for it to settle.
And then for the fruit, I peeled and sliced about 2 apples. I used a mandolin so the slices are uniform. Sliced the strawberries, kept the blueberries black berries and raspberries whole. I baked the apples a bit to soften them up.
For the glaze, I made a simple syrup recipe with a little lemon juice and 1 tbsp of cornstarch to give it a slight glaze. Then I tossed all the fruit in the glaze to give it that shiny look then just layered my fruit
