Experience and blind tastings at home. I didn’t find guided tastings at distilleries that helpful (there’s usually some disconnect between stated tasting notes and what any given person would perceive). Blind tastings helped me figure out what I like and, more importantly, identify the differences that made me like any specific pour.
Go to your largest liquor store and buy a bunch of minis. Do blinds between 3-4 different pours.

I’m also trying to get better at tasting. For me - whenever I have a new bottle or bottle I haven’t had in awhile, I’ll go through a tasting on my own and try to identify the smell and tasting notes. Then I’ll look online to see what the reviews say. I’ve definitely improved and can usually get a few of the tasting notes.
Other learning resources I use: YouTube videos, Reddit and Podcasts.
Honestly peruse review sites to get an idea of different types and then selectively try them to figure out what you like. I like the Breaking Bourbon site.
