But they will also ask you who with, as they want to pass that info to their boss to try and get in there, so if you’re lying the best have a good story lined up

They do sometimes ask that, which is why I recommend if by some chance this is the first recruiter someone is speaking to this round they reference other companies that they’re applied to or had informational/“could you refer me” conversations with an employee at. I’ve been through the interview process early this year (and got a career best offer after six weeks) and mentioning [broad functional roles] with [named a couple of the bigger name companies] “and a few smaller startups in the Kubernetes space” was sufficient.
In my case, the other hiring processes were real, but I would often exaggerate my seriousness of my prospects. For example, I’d say I was “interviewing for a couple of senior technical program leadership roles at Atlassian” when I’d only just passed the recruiter screen and was waiting for interviews to be confirmed.

Yes. But don’t share the names of the companies though at this stage. Unnecessary. And if they’re bold enough to ask, you can say you’re not comfortable sharing at this stage.
If it’s an outside recruiting firm they could be using information on where else you are interviewing to try to snag business. Never disclose.
Imo unless you close to the offer with someone it doesn’t matter. Its just a question they ask because its on the list. If the hiring manager likes you they will drive the process. Don’t overestimate hr investment
