If you’re buying from a dealership, they won’t let you drive it off the lot until it’s insured. Call your insurance company a few days before you intend to complete the transaction to make sure you’ll be ready to go.
If you already have car insurance in your name, they can assume that the new vehicle will roll under that coverage and you’re expected too update as soon as you can. If you do not have any current vehicle coverage — which it sounds like the OP does not — you can’t drive a car off the lot (at least if the dealership is doing their job, high is an *if*).

You effectively have to do it that way; the carrier can’t quote you a price and write a legal document (policy) without specifying what car they’re insuring. They need to know the make, model, color, etc. to price it, and they need the VIN to make sure they’re insuring your specific car.
Technically it’s illegal to drive a car with no insurance (in most places) and if it’s not covered yet and you get in an accident, you’ll be hosed, so you should have incentive to get it covered as quickly as possible.
Having said that, you could get some quotes online or a referral for a carrier, and start talking to a them while you are shopping to get their advice.

Last car I bought I did it on the spot through the Geico app. I was already a policy holder though but I wouldn’t be surprised if you can do it from start to finish on their app or a competitors.
You can get quotes online/the app ahead of time to get an idea of ballpark costs and compare. I imagine you have an idea of what kind of cars you’re looking at. It’s worth calling them too— you likely get better service as a prospective customer.
We did this too but weren’t geico customers previously. Was super easy to do in the dealership while we were waiting around for everything. And at that point, you’ll know which car you’re buying to tell the insurance company
Many times car dealer will give you temporary insurance that may be valid for a week. Hence you can drive out the dealership with a valid insurance and then can call any carrier of your choice and get a new insurance within a week. I did this first time in 2012 so it’s not something new.

I’ve always just called the insurance company the same day/next day and they had no issues with it
But they would have an issue with it if you got in an accident between the time you bought the car and the time you called to bind coverage! Definitely call to get insurance first. The dealership insurance doesn't cover you after the sale closes.
