I'd take the more pay for more work. I assume the bonus at the am200 firm would be peanuts compared to the am100 firm so the end result is probably much more than $35k. Also, an extra 150 hours is like 3 hrs a week. You can do that on Sunday or a half hour each day. Seems like a no brainer to me.
Would depend where I am in my career. Earlier I would do the Am100.

Option 1 easy. Work 1750 hours and make 35K more. So what if you don't get a bonus? The after tax and stress cost/benefit is no where near worth it in my opinion, and no firm will fire you billing 1750 forever. Also, #1 probably has "firm credit" stuff like mentoring or pro bono that can help true up stuff if you are still are gunning for the bonus.
