Some things that helped me develop more poise when speaking:
I always have a coffee or a soda to drink. When I want to jump in and say something, I take a sip of my coffee and write down my thought (on a word doc usually). This really cuts down on me just jumping in without thinking or honing the message.
I also used to practice the way I’d have liked to respond to something instead of the way I did. Think of the last thing you said that you wish you had said with more poise. How would you say it this time? Speak it out loud to yourself (at home). Do that when you feel cringe after an interaction. It will eventually help because you’ve practiced scenarios.
Before calls/meetings with clients, I think of the message I want to give them. I type out word for word what I’d like to say to them and read it a few times. I make an agenda for most calls/meetings, even if I don’t send it out. I don’t necessarily use the script I wrote out beforehand but I have it on hand in case I get nervous or forget my train of thought.

I think you can definitely get there re: not needing a verbatim script. I think knowing the subject matter and the client make a huge difference
