I tell them they should take some time to compose themselves, and then we’ll reconvene the next day.
Yeah I had to do this 2 years ago when during our year end review they started crying even though they were not getting fired or anything I simply asked them to improve on a few small areas.
Do you know the why behind the reaction? Is it the first time they’re hearing it or the forth. Obviously they disagree, but can they explain why?
Step 1: I try to figure out where the reaction is coming from. Where’s the disconnect? Could be something completely unrelated, just manifesting in the conversation. Or they’ve been bottling something up for months. Or maybe they’re just being unreasonable and denying reality. Either way, if this isn’t repeated behaviour, I think we owe it to them to ask more questions.
And of course if they need time to calm down, set up another time to talk the next day.
Also you might reflect on your delivery - communication is a 2-way street…. You can ask him/her for their thoughts on the conversation to get the dialogue debriefed.
