Yeah we do full fat yoghurt, berries, and granola everyday. Takes a couple minutes to prepare. Follow that up with a cut banana and he's usually good until lunch
The easiest thing for me is to buy any sort of frozen waffle, pancake, pancake bite, whatever from trader Joe's. There's enough variety in there that my kids won't eat same things two or three days in a row. Plus if you microwave them they're pretty soft.
Eggo mini-pancakes have been a godsend. We pair with the Costco packets of yogurt and applesauce. Berries too.

We do scrambled eggs with smoked paprika, avocado with curry, and plain yogurt with prune purée. She loves it! If you have time on the weekends, pre-make some egg cups using a muffin/mini-muffin tin that you can re-heat in the mornings so you don’t need to make the eggs everyday
Yep, we play around with different spices (a long as they aren’t hot) for the main purpose of exposure. We haven’t come across something she doesn’t really care for, fortunately. No blends or things with added sodium or sugar obviously, just core spices
We always have whole milk yogurt around, make oatmeal in an instant pot ahead of time, freezing egg cups works great, fruit smoothie is a hit (can also freeze), and then just fresh fruit. Scrambled eggs only take a few minutes.
We also have some low-sugar/sugar-free cereal that our kids like (without milk for the little one)
Costco has microwavable egg cups - 90 seconds in the microwave
Waffle with butter. Our daughter is obsessed with croissants. Yogurt. Oatmeal. Banana. On days where she wakes up grumpy, we make a smoothie since it fast and is more like an activity.
We probably do a waffle 75% of the time. It’s what my daughter generally asks for so it makes life super easy.
