Turn on auto-reply assistant with message that explicitly states you will not check any messages until back in the office. Turn off notifications on PC/phone.
Following is not just for PTO/OOO:
Setup inbox rules to color code your emails (you alone in the To: line, message text is blue, you and others in To: line, message is purple, you in Cc: line, message is green, etc. Also check all emails, via rules, where you are specifically mentioned in the email [color message blue also, check body of message for your name]. Handful of other rules that can be helpful also, but color coding is easiest.
Delete (can be auto-deleted) all messages that aren't blue, possibly include purple too depending on email standards at your job. If your schedule allows, feel free to skim other colored messages, but in general, don't read them, don't waste time on them. If you feel nervous at first, move them to a separate folder in case someone asks about an email previously sent until you get comfortable enough deleting them.
If you worry you'll miss something important (you won't), someone will follow up with you on whatever it is you might have missed.
If people don't know how to send emails properly (@ing you in body if they want you to reply, putting you in To:line if the message is for you, etc), that's not your problem, feel free to educate them on proper email sending afterwards.

0 instances of an issue from an email auto-deleted /not read / etc.
I only read about 20% of the emails I receive. Email is a huge time waster.

DONT! UNPLUG this is time for YOU. I used to because I have anxiety but then I was so anxious about all the emails I read and everything I needed to do when I got back.

For me, I get immense joy out of looking at my emails and knowing I don't have to deal with them / my poor team has to handle them all

I only check them to delete the spam ones / mark the ones I don’t care about as unread. Takes about 2 min a day. That way when I get back I only there are only the important ones left.

Don't. It is amazing how many either aren't important or get dealt with by someone else.
In addition to the rules mentioned, when I return, I sort by subject and read the newest one first. Most of the time, the rest of the chain can be marked as read and filed away.
Always read but rarely respond while on PTO unless it is URGENT. There is no way I am walking back after PTO to 700 unread emails
Depends on PTO length, just read the most recent 2 to 5 days of emails. If there was a crisis while I was away, it’s either resolved or I would’ve been contacted during PTO. As a manager, after coming back from time off, I always asked my direct reports to give me 1) a summary of the top issues that came up; 2) any decision or deliverables waiting on me.

In fact, I don't even bring my work phone or laptop with me. I always make sure coverage is set up and my OOO provides enough pertinent detail to route people to the correct person. My designee has my cell number for if there's truly an emergency, but that has happened maybe twice in the past 10+ years.
I don't do the color coding as SC1 suggested, but I have a rigorous set of rules and folders that keeps my inbox manageable. I took a 12 week parental leave last year and came back to only ~350 emails that I needed to sift through.
