Florida's pay is definitely higher especially if you take into account the CoL and no state income taxes. However, I've worked with companies that get acquired by PE and the work culture takes a turn for the worse as everything becomes about the bottomline.
Yeah that's been my concern as well. I think work life balance is more important than the money to me right now.

Made a similar move earlier in my career, going from a giant company that's well known in their field to a near IPO startup for about the same comp raise. I only stayed 2 years before jumping ship, and I felt like I was getting kind of desperate to leave that startup without a ton of options. Eventually got another big company job, but got lucky with a connection.
Startup went under 2 years after I left and never IPO'd. I'd just say be ready for instability, but it was a great learning experience, even if it didn't do wonders for my career.
I was still an engineer back then. That was a fairly niche technical role. I'd say your chances of exiting if necessary are probably infinitely better on the commercial side
