I’ve worked at AT&T as a sales consultant for 6 years and 8 months where we prospect, uncover, and close on leads. I’ve used Salesforce for the past 4 years during my tenure. But tbh sending personal emails to people who have helped you along the way would be nice.
Have a one on one with them. Most people will be really supportive about the next step.
Keep it simple, explain why you’re leaving and express your gratitude to them. I also wrote thank-yous to mentors when I left (separate from giving notice)

I appreciated the heads up and just genuinely learning more about what they were planning to do and celebrate with them. Great to see their growth and trying new things, even if it’s outside the company.
