Super honest imo. I left nothing to the imagination. I think of it as doing the next employees a favor. Hopefully they heard me and do something to change the bad and keep up the good. The vicious cycle won’t ever become not vicious if no one knows it’s vicious.
You can be super honest, but don’t expect what you say to change anything.
Please be honest in the exit interview, especially where unethical, biased, toxic behavior is concerned. You have an absolute obligation to help the rest of the team still in that situation as you leave. You are in the best possible position to speak out and affect change, without retaliation. If a few people cite similar reasons for leaving, you can bet HR and leadership will look into it and address it. If everyone is quiet there are no consequences for the unscrupulous. Frankly, if leadership takes their role and the company's reputation seriously, they'll want to act on this valuable information.
Barring those 3 scenarios, I agree with being diplomatic and professional to avoid burning bridges. It's true, that you never know when you might cross paths with folks you leave behind or people who know them.
There's honor and integrity in having the guts to speak out about real issues in the company you leave. Staying quiet is pretty small and self-serving.
Just so everyone knows, HR exit interviews are a legal play, not meant to really identify areas of the company they can improve. You’re not going to save your coworkers by bringing up issues. You’re best suited not saying much. Legally you’re not obligated to do an exit interview at all so why bother

Just say the new job is paying you a boatload more money.
I can’t think of any lasting upside for being totally honest. If they were wanting to listen to critical feedback, they would have by now. If you must, keep it tactical (monetary, etc), nothing personal.
I'm brutally honest. I can't expect them to get better if I don't be honest. Maybe that is a bad thing.
One of the more disappointing exit interviews I had early on in my career happened when I mentioned that it would have been nice if people confirmed receipt of my work or replied thanks! when I sent requested work over ( I would literally never hear back after I sent things out and thought that at minimum people could confirm receipt). Without skipping a beat the hr person replied, well maybe they just figured it was your job. As if I was expecting too much to get a confirming receipt or thank you.
Don't forget to shout-out people who are doing a good job
Keep the problems to yourself. They are checking a legal box. Nobody will implement company-wide change based on a scathing exit interview (or even a large amount of them).
