I was just offered a CUNY role. The title is Higher Education Assistant. According to Glassdoor, the average annual pay for that role is $83,418. However, I was offered $62,500. I requested for the minimum annual salary to be 75k. Does anyone have experience navigating the CUNY system and their pay?

Yes. I’ve been in this situation. Take a job if you don’t have a full time. Switch later for a better opportunity.

Nothing in this job market is "normal." Are you currently employed? Why are you looking to leave? Is this job higher pay? There are always risks with contract roles. Will it be a true employment contract that you are guaranteed (unless you were let go) the dull year by signing an employment cobtract?
Contract roles often have low to no real benefits, but the base pay can be higher. It really depends on what your goals/priorities are right now. DoLS posed some good questions to ask yourself. I would also factor in what benefits are you looking for and if any of them are non-negotiable?
When I took a contract role, I was on my fiancé’s health insurance, so that wasn’t a big factor for me, but it could be different for you, especially if you are looking to provide for a family because that is one benefit you likely won’t be offered.
