Whenever I reply back that while I am very interested in the company I don't believe I have the right skills for an engineering/coding heavy role, I get ghosted by them

You should just set up the first call and talk to someone on the phone about it

Put the words of roles you want on your profile so you show up for those roles in the search. I suspect that they basically mass email people using certain key words. Your profile returns on the search

Lol. You cover everything in cloud except the ones recruiter wants you for :)

And I’m over here trying to get recruiters from Google and other FAANG companies.. lol send them my way please 🥲

Because they don’t recruit for those roles. Find a sourcer for cloud and take it from there.
