Having an open discussion is a good place to start.
Quietly express your distaste, they’ll get the point (eventually). I don’t know what “discipline” them means but it doesn’t sound productive.
I don't think discipline is the answer because I mean we are adults. Just maybe have a convo with them and express your frustration?

Not so much the "inappropriate joke" part, but I have often had younger coworkers who assume that if you are older you don't understand the current technology or new design standards as well as they do. I don't let it bother me, our boss knows what I bring to the table and I am compensated well for that experience.
You’re fine, just remember they’re learning and need help like all of us did. I’d offer mentoring in areas where your/their management sees opportunity for growing.
So much of this is subjective these days. What would be an example of an inappropriate joke? Aside from dad jokes, I think youve got to be careful.
Questioning assignments I think is a bit less subjective. Are they repetitive and dull? Tough, kid! Welcome to the real world.

Questioning assignments respectfully is a good thing. If they make you realize that something could’ve been done in a smarter way, you learn with them.
