Thailand would be the best bang for your buck. Has a bit of everything, amazing food and friendly locals. Whatever you want to do in the other countries. Thailand most likely has it too.
Have you been? What areas would you recommend?
Flights to Thailand are cheap. Go to Australia.

Economy or business class? Agree with SC1 that Australia (or NZ) probably optimizes the cost and both would be excellent locations for an extended trip.

Have been to both. Japan was one of my favorite trips and there is so much to see in the country. It’s also incredibly easy to get around using the rail system.
Hong Kong is an easy add on for a few days (and one that I enjoyed), but you could easily spend 2-3 weeks just going through the different regions of Japan. Wouldn’t recommend spending more than 3-4 days in HK if you want to include it.
What kind of experiences do you want to have on your trip? Personally with 2.5 weeks, I’d go to Japan or NZ. You could tour a bit in both locations. If you do choose Australia, rethink the Gold Coast…
Yeah, the Gold Coast just like a collection of large and small towns. Some attractive beaches, good for outdoor adrenalin-y stuff or for getting out of your head at nightclubs… Honestly if Australia had a Jersey Shore, it would be the Goldie. It’s just if it’s your first time to Australia, it wouldn’t be where I’d start. Or even on the to visit list 😅 Sydney/Melbourne for city and foodie vibes, then further North in Queensland for whitsundays, rainforest, indigenous cultural experiences, great barrier reef etc.
I would personally choose Japan! I've been to all the listed places except for Bali but I know Soo many people who've been to Bali. It depends on what you like. Japan has soooo much interesting culture and food. Bali is more of like a beach/villa/food paradise. Australia and NZ similar but different. More urban and of very city like in Gold Coast with cools theme parks. They also have nice beaches like Surfers Paradise. I heard of Spring Brook but never been, check it out! NZ, you can do a lot of outdoor adventures and go see the Maoris. We did White water rafting in NZ, farm stay, glow worm cave boat ride, black water tubing, skydiving over Lake Taupo. I'd adventure outside of Auckland. Thailand>amazing food and cheap. Tropical country and if you go there, do the beaches and island hop if that's what you like. The waters are sooooo clear at the islands. Snorkeling was amazing! You can do tours there, they will pick you up from your hotel/hostel. So it really depends what you want to do and like to do.
If you’re looking for more nature/cultural then I would choose NZ! NZ is one of those places you do need the 2ish weeks to visit because jet lag for the first day or two and then there is simply so much to see and do. I would doublecheck there aren’t restrictions at time of travel and go for it!
LOTR, the Hobbit, Narnia, lotta movies filmed there. Some gorgeous places: Tutukaka Coast, Tongariro NP, Marlborough Wine Region (check out those NZ sauvs). Really fun adventure stuff like surfing available.
