I had interviewed with Deloitte UK consulting in June/July and was called by the HR team by the end of July that the interviews were positive and they're sending for approval for an offer to be rolled out. My old boss used to say it was like talking to someone at a bar. It doesn’t matter how nice their shoes are - once you start talking you kind of know within 90seconds whether or not you want to talk to them again.
Mobile responsive*
If you’re an art director and/or working in integrated/ digital, it needs to be somewhat responsive. If you’re a writer, I don’t care at all. It shouldn’t be an issue these days, though. All the popular portfolio platforms are responsive.
If your site doesn't work on mobile, I get annoyed and may not remember to visit on desktop later.
Between squarespace, adobe portfolio, whatever... It doesn't matter. As long as it's easy to navigate.
However, I do slightly judge people who don't pay to get their custom url, or pay to remove the "made with Wix" or whatever. But it wouldn't stop me from hiring or recommending someone.
But an easy to navigate site that works on mobile and is filled with great work is all that matters.

It’s easy enough to make a really nice responsive portfolio site, why risk anything by not just using a responsive portfolio template?

I can tell the site platform when I see it, but no, it doesn’t affect my hiring.
As long as its mobile responsive and somewhat decently designed, I move on and focus on the ideas.
