I would hope after the pandemic that taking a sick day is much easier, that would be my go-to
Emergency apt repairs, like a broken pipe, so gotta wfh today to wait for super/repair person. Furniture deliveries, so gotta wfh. Gotta have a filing fixed, so will be out of pocket for an hour or two....

I just say “I have an appointment”, which is true. Sometimes I even say “it’s across town, so I may be out of pocket depending on trains.” Then if they ask what it’s for I just say “personal stuff.”
Could be a therapist appointment, doc appointment, anything really.

Do you have a boss who needs to know where you are at all times?
The same way we did pre pandemic.
I’m a junior that has only lived this pandemic life style 😅
Just leave, do your interview, come back, and don't miss any meetings or deadlines.

You just take sick days, emergencies, etc.
They know you're interviewing because the pattern changes and you probably expressed an unhappiness or at least a lack of happiness already, so if you really want to try and obfuscate it, come up with something ongoing, a reason for repeated absence, like the long slow death of a loved one.
Or you can skip all that and just make the bullshit excuses, and if they're smart enough to put it together, and want to retain you, and have that freedom in their P&L if they think it's a money thing, or whatever the best guess for you leaving is, they'll make an effort to keep you around.
And if they get all butthurt and retaliate you didn't want to be working for that kind of person anyway.
I used to take a sick day and then schedule multiple interviews if you have to
