Depends on what part of EY you join. I believe consulting is: Analyst, Consultant, Senior Consultant, Manager, Senior Manager, Director and Partner.

I know of good people who are 3 to 4 years in grade before getting promoted from SC to M or M to SM.

Yep correct.

Analyst is referred to as Staff in the systems if I recalled

I am looking to foray into Devops for the first time. I am skilled in R programming, Data science and machine learning. What tool would be recommended and where to learn it from? I don't mind if the coding part is higher.

I work at an manufacturing company as a technician. My job title is a technician but they use me as an engineer as-well. There are three techs overall in the company. My boss who hired me understands what my degree is in so he uses me to design parts and write reports. The plant manager doesn’t know my skills so anytime I’m in the office working he calls me to the floor to do something the other techs can do. Should I have a talk with the boss about it? (I ran out of characters)

I currently work at a medium sized firm and have about two years experience in personal injury litigation. The billable hours and lack of work life balance are really getting to me and I am looking to switch to something else out of litigation, preferably in house. I am also looking to relocate to a different state. How do I go about properly marketing myself to companies that might not take my relocation and minimal experience seriously?
