I do not recruit for SWEs so cannot give you exact details but your recruiter should be providing this information to you once you have started the process (first technical interview being scheduled). If they have not told you, ask them.
Once you get past the initial screening there’s a program to speak with current people in your role about their roles and processes. I can’t remember what it’s called but ask the recruiter. I’m only familiar with the process on the Ads side of the organization. There are less committees than Google and less 3”eccentric questions, but still many rounds.
I found the Data Science technical interview reasonable. The problems were real ones you'd face doing the job as opposed to contrived ones that dont't actually correlate to job performance. The case study part of the in-person interview was a lot of fun and relevant. My personality clashed hard with the person conducting the statistics part of the interview though and it completely turned me off. I did not hide well how annoyed I was by all the ego she was exuding. Mileage may thus vary depending on who is conducting the interview.
