"Tell me about a time in which you faced adversity and how you overcame it." It usually catches them off guard and then they answer honestly, versus prepared.
What would they do to prepare themselves to work on a *insert boring client/brand/industry here*. Everyone has an answer for Nike but not something like Caterpillar. I feel like this has helped me identify bullshitters pretty quickly.

Do you have any service industry experience and if so what do you think that taught you that you can bring to the business world?
Spend time learning about them as a person. What they do in their free time, why this industry, why this role, what skills they have that will help them despite being entry level ... you’re trying to get a feel for their fit with current staff. Do they compliment / add an element you’re missing? While also trying to feel comfortable with their ability to learn quickly. Are they serious / dedicated / driven? Focus on personality over skills ... has served me well in hiring entry level
