Any advice on how to balance job offers if I'm still in the interview process with another company? Currently have 2 outstanding offers but am more interested in the company I've just stared the recruitment process with!

Hey everyone - I could do with some advice. Not sure what I am doing wrong, but I am having a hard time getting interview calls. I am trying to pivot from consulting to the industry and targeting project/program management roles. I have been doing this work for 7+ years now (total YOE 12 years) so certainly have the right skillset. I have tried a couple of referrals too but that didn’t help either. Hey guys, I have the first short 15-minutes call with a product guy from Hugging Face today wherein he is likely going to take a guess at what roles I could be suitable for. I had interviewed for Cognizant and I was asked to submit my documents for offer letter release. This happened on the same day as my interview(Friday 6th May). I submitted my documents and I am trying to contact the HR who scheduled my interview, but she is not picking up my call. My question is how soon can I expect the offer letter to be released? And is there a possibility that they can reject my profile at this stage?
