Google will be your best friend tbh. Search things like procurement operating models/ processes / frameworks. There are some pretty standard things out there.
Most of these acronyms are folks trying to sound hip, and they are just isolations of certain steps within whole Source TO(2) Pay or S2P spectrum (e.g. S2C is the front of the end to end S2P spectrum where you go through spend analysis, sourcing exercises, and negotiate contracts with suppliers to put in place while P2P is the back end once you have pricing in place and you are just placing requisitions, purchase orders, getting invoices, and paying out of AP). This is obviously over simplified, but you know we consultants love our TLAs!!! (Three Letter Acronyms ;)

Spend matters has good info on the acronyms, details of what they are, and the vendors that specialize in them.
Best process to read is the Kearney 7 step sourcing process, which has now been adapted by every other procurement consulting practice (5 step, 4 step, 12 step) process. If you can learn the 7 step process, you will have learned the most critical pieces.
There are niche areas not covered.... reverse auctions, P2P, but there are other sources for that.
