You risk your offer getting rescinded due to hiring freeze or layoffs.
State your reasoning for the alternative start date. Although telling your recruiter that you need more time to adjust might sound like a lame excuse but it's honestly reasonable on your end as everything happened so fast. You don't have to tell them in detail, just say you have prior commitment for a more professional reason.
Tell your recruiter the honest reason or that you have prior commitments. Perhaps you could ask if you could complete alternative tasks in the meantime like attending a training session.
Honestly, I would start now but tell them you have some vacation time planned for the holidays and give some dates to still give yourself some time off. Otherwise you risk having your offer pulled or them moving forward with a different candidate.
Yeah this might be the easier way to frame it. You risk losing the offer if you say mental health I feel, but I think with holidays and stuff it's harder to push back since it's something set in stone if that makes sense
