Ethernet ports in every room at minimum connected to a central switch. That opens a lot of possibilities for wireless access points or just hardwire connections for static devices like streaming boxes or consoles, etc

Conduit with space so it’s easy to pull anything you want in the future without damaging walls.
For immediate need, drop a couple of CAT6 to each room, and ideally have a well-ventilated (or even dedicated AC) closet that’s easily wireable from the outside to place networking equipment, home automation stuff, audio systems, low voltage lighting controls, etc. You want a cable and telephone drop here so you don’t have to leave your ISP’s router sitting on a kitchen counter or your living room.
If the house has a crawl space above or basement below, that will make it much easier in the future to run new lines. Getting future cables across a vaulted ceilings or concrete slab foundations is basically impossible, so make sure to run a nice fat conduit between areas of the house separated by these. Remember that you cannot put power and data cables in the same conduit and your networking conduit doesn’t have to be metal.
Cat 6e plenum rated cables, two data drops per room, dedicated networking closet/rack. Two conduits to pull in fiber/ Internet from your street to the closet, run four cat 6e to garage ( incase fiber company wants to put a box there), dedicated dual quad power outlets with sinewave ups backup.
You can just get mesh after the build if any of these options are too expensive. Mesh would be <$500 and the internet is fast and all over the house. I have the TP-Link Deco and it solved all my issues with video lag etc.

Yeah but you can’t use mesh for home automation, future sound systems, Crestron lighting, security, etc.
Mesh only solves for your network needs. Lots of other stuff can use CAT6 or the conduits.

Cat7 cabling to 4 central points in your house. This will be used for setting up access points down the road
On another note, can anyone recommend a good mesh router that has USB port to use with a hard drive?

Just get a NAS and plug it into one of the network ports. It’s better to have dedicated hardware for different roles. Don’t want to lose your network storage if your router dies or vice versus.
Getting a mesh network with a back channel should be fast enough to make internet connection the limiting factor.

I wouldn’t bother with wires. Get 1 gig service plus the best router $100 can buy and Eero 6 WiFi.
