I'm assuming you aren't a software dev, so it isn't your job to create reusable tools. Do what needs done today, don't get hung up on crap that isn't your job.
But due to the nature of the project every day is just putting out another unanticipated fire. I feel like once I leave, I’ll have nothing to show for myself or contribute back internally aside from the several emails I’ve authored and coordination I’ve mastered. Maybe my standards are too high for myself but also afraid how this will impact my career growth

OP, you are put in a less advantaged position on this project, you will need to spin your story to show how you ensured success of this project
1. Maybe switch to having smaller roles on collateral initiatives? Your name will still be on stuff, but it will take less work/time.
2. Maybe document how you're working long hours and delivering great work, and that makes up for the fact that you cannot contribute as much as usual to collateral?
3. Maybe work longer hours? Sometimes, you're just screwed, and going from 50 to 60 hour weeks for a while is what you need to do to keep client happy and maintain your internal efforts. Be careful to assess what is realistic for you: 40 to 50 hour weeks for 2 months vs 80 to 90 hour weeks for 6 months are very different!
Joined a project in the post go-live phase, everything is in crisis mode so each day is chaos and I’m really just writing, sending, coordinating comms. I’m very much in the weeds and a “doer” but feel like I owe it to my practice internally to produce assets that are new, novel, innovative, and reusable.
