Client would be sensitive to price in my view, depending on the price difference. Similar? They wouldn’t care, 3x? They absolutely would care.
Personally I do not care, whatever minimizes my time in the air and maximizes it at home. As a consultant that travels weekly, if I can be home 2 hours earlier on a more carbon heavy flight, sign me up, I want to be home. I value that way more in current times.

A few people choosing eco options doesn't prevent the other flight from flying.

Client is typically too price-sensitive to sponsor your environmental concerns, or their corporate values might not be aligned with your personal values; it’s also true that
-many airlines offset their emissions or let you purchase the option to offset your emissions (you can argue about how effective these are, as it depends a lot on which projects end up being sponsored, but it still goes a long way imo)
-some airlines (especially in Europe) consistently use biofuels (up to 70% less emissions) or let you purchase biofuel to cover your trip (obviously this won’t literally be in the tank of *your* plane, but will be used on a later flight)
-some companies also offset the emissions caused by their business flights (I work for one that does)
To integrate all the above, I chose to plant a tree for each hour spent in the air every year (it’s not a great metric, but I’ve seen it being used by travel bloggers savvier than me, so it’s probably good enough); other options include purchasing your own carbon credits (but do your due diligence on what the real impact is) and donating to other charities.
