This can be so tricky. You might have to get really good at saying no. You might also want to talk to your boss about being compensated for the extra work.
I usually get anxious with a new request but I have always been able to figure it out. The feeling of accomplishment you get after completing the task is great.

That's what technical consulting mostly is. If you don't like that - not saying it's wrong to - but if you do, you should seek out an industry job more centered on the things you know and want to do.
I treat it like a roller coaster. I get a little bit of anxiety before I start but once I'm going, I love it. Of course there are times when I get in over my head. But that's part of the fun.
