I just didn’t take math senior year because I’d already met the state’s requirements (NJ).

My math class would have been 1st period so I got to go in late. I got into the colleges of my choice with scholarships and then went to law school. Not taking math senior year had no meaningful impact on my education or career.
I took Calc I in 10th grade, Calc 2 in 11th grade (IB program) and then had a special Calc 3 class taught to me in my teachers spare period.
Was your IB program at a public school or private school?
I did the same track as your oldest (calc BC in 11th and AP Stat in 12th). I would say for your younger one to do those courses and then Differential Equations or Comp Sci if the school offers it, or do a college level course. If they want to major in pure mathematics, do Diff Eq. If not do a Comp Sci course to see if that might be a way they want to apply their math & reasoning skills.

A couple of my classmates took college courses or participated in a college internship type program designed for hs seniors with their extra time
Think about where your kids want to go to college. Many universities will give credit for these advanced courses but some colleges do not give credit for APs or any previous coursework. That could help them decide how they want to use their time
I could see my oldest majoring in math/engineering, but my youngest strikes me as a likely business major. He’s the one I’m having a harder time figuring out how he will fill his free time. He’s really good at math but I’m not sure how he will use advanced math in life after school…

To my eye, looks like you skipped AP Calc AB and went from PreCalc to AP Calc BC. At our school there's that middle step. Our school also offers AP Stats, which my accelerated kid will do when he's done with all the calculus but is still in HS
Oh interesting. We are in Illinois if that makes a difference. Calc AB and Calc BC are alternatives to each other but not taken sequentially at our district. There is a Calc 3 though and 4 comp sci classes.

The school will have options. They can take stats or comp sci or art or another history. They can decide at the time. You don’t need to game it.
If they want to major in engineering there will be lots of advice in what is best to take, but honestly, every school is different and so every kid entering college has slightly different transcript (for instance, my kid took AP stats in 10th, before calculus). For the elite schools they just say you should take the most advanced classes available to you at your school. If you finish those early, they don’t care.
You are overthinking this. Your kid is not the first to take that path. (I also know a kid who was in calc in 9th and has totally flames out). Another was pushed by parents to take differential equations and ap comp sci in 12th and the goa is taking a huge hit.
