You don’t need to matriculate for 2-3 years right? So I would reapply to H/S if you still want to go to B-school when the time comes and if you don’t get in, you can accept your deferred

In general, for deferred admissions, you should use the time to shoot your shot. If you don’t get in via deferred, you can reapply. In my eyes, if you weren’t jazzed about the school that accepted you, you probably shouldn’t have wasted your time applying to it.
Yes, you can build a stronger app over the next few years and reapply with the mindset HBS/GSB or bust. If that’s where you really want to be, shoot your shot. You might get in…you might not. A friend of mine faced rejection as a deferred candidate but accepted upon regular application. I’ve heard of people being rejected via deferred admission and then rejected again as a regular applicant too.
Alternatively, if you were accepted via deferred admissions, I’m sure you’re essentially capable and will be successful whether or not you go to HBS/GSB. Deferred also gives you this incredible period of as many as 4 years ro take risks and try new things that may better inform what you want to do after your MBA without the stress of reapplying.

Might be just me then, but I've seen quite a few duds get into HBS (they are accomplished in the traditional sense, banking -> MF PE since they are pretty smart and willing to grind hard and honestly prestige whores. It's hard to imagine these people as executives). I'm sure other schools have these people as well.
So I think there are 2 primary things to consider here. 1) Yes HBS and GSB are set apart and will carry more weight on your CV throughout your career. 2) That being said, if you land your dream job at another MBA and it gets you where you want to go, who really cares what school you went to
To answer your question, if I were you, I would take the MBA and run with it early. Will set you up nicely as an M7 school is an M7 school.
