I loved Belize. Highly recommend.
My understanding is that you want to get out of Belize City, where the airport is, as soon as possible (crime, plus nothing to do there). San Ignacio is obviously land based activities, all of which I’ve heard are incredible. I’ve also heard Caye Caulker is the Caye to go to, and that I messed up by going to San Pedro.
I also went to Belize for the diving. If you and your SO are interested in diving, get certified before your trip - it’s some of the best in the world and very easy for beginners.

Went to Belize in Dec for a scuba trip - 4 days in San Ignacio, 7 days aboard the "Belize Aggressor III".
San Ignacio was pretty cool. Very good food, especially breakfast at Pop's and dinner at Erva's. We did the ATM Cave, Xunantunich by horseback, and a Macal River Jungle tour. All were fantastic and memorable. Have some Soursop juice wherever you go, it's an absolute shame that we don't have it available in the US. Try and eat Belizean - Recado and Habanero are key ingredients.
Scuba is a different beast, but the diving along Lighthouse Reef was amazing. If you dive, this is one of the best locations in the Caribbean.
I know nothing about the resorts, but did do a sharks and rays snorkel off of Caye Caulker a long time ago...seemed like a cool place.

I’ve been! Stayed in San Ignacio for 5 days and took a day trip to Caye Caulker. Had a good amount of fun, I’m not sure if there’s anything you’d need to know - bring cash, rent a golf cart! Feel free to dm any questions

It’s really nice. I prefer sandals or half moon in Jamaica though. It’s a little pricey though
I’ve been there and loved both San Ignacio and Caye Caulker. We went to Tical from SI. Totally worth going!! That’s going to be an amazing trip!!!
