I'd actually focus on the quality of stories over quantity. it's OK to repeat examples as long as you're taking a new spin to answer the question and the impact is substantial. For mid level roles, most people have 6 solid examples with data to support.
To prep, take the STAR methodology seriously. Write down your stories in that format and rehearse saying them. A common thing I hear in debrief is that interviewers didn't understand the impact. Negate that by clearly stating you goal vs impact: "my goal was X. I delivered X and Y within time frame which lead to Z% cost/time/quality increase"
Be prepared with lessons learned for every story. The most common follow up questioning you'll get is "what was your greatest lessons learned?" Or "next time, what would you do differently?" Amazon has a fail fast culture. You want to say what you learned from the situation and how that learning has shaped how you currently work. Something like: "I learned X. I was able to apply this learning to similar situations. For example, Y"
