IMO, Injira is overrated but I do like all other options.
I’d suggest trying other grains like millets, quinoa, buckwheat etc. More diversity in plant foods is beneficial for a healthy gut micro biome.

continue eating rice ,just reduce it to one time a day , and portion size . , typically avoid at dinner . cut back other starch or refined carbs like bread ,sugar l,potatoes..

I do intermittent fasting, it seems to work for me. Also I measure what I eat, I’m a 33 yr old female at 5’5’’ and I don’t eat more than 150 gms of rice in one sitting. So if you’re eating dal and curry make sure the volume of curry plus dal is double of the rice volume or weight. That really satiates you, also ghee gets a bad rap- but ghee is good fat. Eat it!! Strictly my opinion,always consult a doctor when starting new diets or fasting
