Will it create any problems if i send all the documents and do not join later?

My total experience is 5 in QA, I attended Deloitte interview. First round was technical and it went quite well, they asked lot of theory questions. I answered few and quite I was not sure of answers. She gave feedback like my communication and confidence level is good and project wise I'm having good knowledge and coming to concept wise it's not upto the mark for experience. I've got offer from Dunnhumby, Fractal and Gartner for the role of Data engineer. Which one should I go for?

Tech Stack - Python, PySpark, Azure Data Factory and Synapse analytics.
YOE - 2.2
Gartner - 16LPA
Dunnhumby - 15 fixed + 1.5 Joining bonus+ 10% variable

How many matters is typical for one associate to handle (BL lit)? I know it is group-specific, but just trying to get a general idea. I’m a 2nd year and I am the only associate staffed on about 30 cases-meaning I keep track of all deadlines, do all day to day assignments, keep on top of following up with client/OC, and all research/drafting. Partners handle deps/court but that is about it. Is this a normal case load to be responsible for as a jr? I being dramatic by thinking this is too much?

I joined Mindtree on 8th Feb and not got project and I was waiting for last 2 and half month. So, i gave interview outside (tech mahindra) and got selected. Almost 30-35% they said they will give and i am negotiating on it.

My main concern was shift and i have some health issues and unable to continue in night shift in Mindtree and tech mahindra its purely EMEA shift and per project team update.
