I have not worked for anyone yet, but based on my research, I understand that most business owners and clients are looking for someone who can help them stay organized and focused. This includes managing emails, calendars, and taking meeting notes.
Additionally, I can assist with managing travel plans, conducting detailed research, and accurately inputting data. I am in the early stages of my career, but I am eager to learn and grow. Mileage may very depending on people and their actual needs. As a more basic level, an AA is often travel, scheduling, expenses, some smaller tasks as needed. An EA is all that plus I've done combos of: data collection/basic analysis, research, deck building, proofreading, communications (internal and external publishings), budgeting, staffing tracking (from who is staffed when to tracking PM scope), onboarding, orientation on certain company policies/standard practices/internal tools, time reporting for payroll, event planning/management, business development/pipeline tracking, and so much more. Depending on your trust level and performance of the EA, the possibilities can be endless. Just make sure the compensation matches what you are asking them to do and not asking too much.
Knowing they also support others means being extra careful to not overload the EA and helping them keep that balance for what they actually have time for.

I've often done a lot of travel planning and logistics coordination. Of course, there is always plenty of taking notes, scheduling, that kind of thing. But I've worked for some executives who have done extensive travel, and that became a big part of my job.
I build and maintain dashboards of project KPIs, maintain commercial pipelines and relationships, create SOPs and manage project timelines within my execs purview, manage vendors and partnerships.
Supporting a CEO in the past the main tasks were travel, extensive calendar management, compiling reports and event planning. Expense reconciling and document creation were additional responsibilities.
