How much hike is legitimate to ask? 100% too much?

I’m currently in the process of being converted from contractor to permanent. In my initial conversations I was under the impression that I was in a different pay grade and asked for a salary 25k higher than the max allotted for my position. I've been following Coforge LinkedIn page, and I have decent offer from them. In one call HR said we will be moving towards 5 days work from Office, to which I said I don't mind. Now that aside, their LinkedIn posts everyone at VP SVP levels are joining.. seems like they are growing very fast, as hiring at such high Positions happens only that time.

I do sales for a major engineering firm. Focused on new business and exploring new markets. Last year I was in the top 50% for order intake, and first in number of projects won along with number of new customers. I think this is extraordinary given the effort it takes to win new business.

For next year my goal increased by 2.5X, and less of what I bring in counts towards that target. I really enjoy my job but I will essentially be getting a large pay cut. Lost in what to do besides quit??
