How's Mother NY these days?

My father took a home loan, and the same home is kept as mortgage.
I'm paying arround 22k emi for the same but unable to exempt tax as the loan is on my father's name.

I googled a lot how to transfer it but neither gift deed nor sale deed would work as the property is on mortgage that's under bank's ownership (until loan is fulfilled).
Tax is also getting deducted, I'm paying hefty emis.
What can I do?

Expecting parent, 35yo, NW of $1.2M with investment property in my hometown in Europe near family & friends (mortgage is less than $1k). Current expenses in Bay Area is 5K a month, probably more once baby comes.
Thinking of leaving Bay Area in 2 years and semi-retire for a few years in Europe, focusing on parenting and freelancing.
Any thoughts on this plan? Anything I should be aware of?

Trying to set family expectations and would love thoughts on 2 things. 1. How long after baby will I be ready for visitors beyond our parents? I’m thinking a few weeks. 2. Our 3 grandmothers are 1-3 hour flights away (3 diff places) and cannot travel. When will we be ready to take baby to see them? I’m thinking 4-6 months but that would also be flu/RSV season. 6 months pregnant and just laid off. And 40% of my severance was just taken in taxes .. I just spoke with paid family leave and I no longer qualify even though I had been paying into the program (thanks NY)..
