I have left Deloitte after accepting another offer ( waiting to start the new role and taking time off between) . Now another dream role reached out to me for an interview. Should I tell them I am no longer with Deloitte if the HR asks? They had my old resume. Has anyone been though this situation? My main dilemma is I don’t know what to say why I left the job since the main reason was the new offer.

Don't disclose and start with the interviews asap.

I would let them know you’re not with Deloitte and said you expected to find a new role quickly and wanted to take some time off. If you get an offer you’d need to tell them since then will confirm employment dates as part of background check.

4 weeks is not that long time worth talking. But if you choose to talk initially it can work against during the whole process. One can explain with same reasons later during background check.
