Sounds like this is what airlines consider to be a "trip in vain". It's not their problem that the organization you had intent to do business with canceled your program. They don't owe you anything, and you should be upset with the institution that canceled your plans.

hate to break it to you but if the delay or cancellation isn’t due to the decision made by the airline itself, probably can’t qualify for a claim

To my knowledge, no. I think amex travel insurance covers cancelation due to government restrictions or your personal covid diagnosis, not the decisions of private organizations. Insurance covers "I cannot fly there due to law or testing positive" not "I can go but the thing I want to do isn't happening".

Is getting a flight credit an option? I recently did this for a similar reason.
Here is what AMEX plat says about it. Your case does not appear to be covered.
if you bought insurance with the ticket then yes, if not dispute it. amex is good with disputes
Yeah I would dispute it. Amex generally sides with the cardholder.
should have told airline you got covid and they would give you travel credit for cancelled trips at the minimum
I was able to get an airline credit from American. Maybe try and go that route so you’re not losing your money entirely?

New covid restrictions where? Are they not letting you fly in?
Nah I was going international with a program that got canceled because of institutional restrictions
If you opted for insurance then you can claim, unfortunately it is not automatic
I thought with Amex you can always cancel flights for free. No? Done it many times with my personal platinum

Only within 48 hours of purchased (or 24, it's been a while) and only if purchased through Amex travel.

Airlines are largely unsympathetic to COVID. Don’t bother with them
You can always ask Amex???
Can you buy third party travel insurance now before you cancel and then use that? Like WorldNomad etc
