JPMorgan Chase recently introduced a policy change to increase the notice period to 60 days. I'm a 602 and resigned recently and yet my LWD is showing up as 30 days from now. Anyone recently resigned can confirm if they are facing the same or new policy is in effect. This is causing confusion with the next companies I'm interviewing with.

Same boat.
How have you been trying to deflect attention from yourself? It’s really hard for me to care anymore.
Possibly , consider putting in a little more effort to get yourself off of the hot seat. You can look for jobs and interview elsewhere but there comes a point where your manager will just assume you are checked out and looking elsewhere. Try and convince them that you are motivated to some extent, trying, and want to improve while they are paying you.
I know that I’m not good enough for the specifics of this role but my manager is still pushing for me to “improve”. I mean is there even an advantage of pretending to be motivated?
Don’t burn a bridge. Pretend to care. And create “plans for progress” and if you get another offer . Run.
Lol. Take accountability for your weaknesses. Aknowledge them. And tell them how and why you want to get better.
Things have gone from bad to worse - after meeting today my manager now wants to have another 1:1 every week, assigned me some technical training and wants a complex action plan of learnings from each project I’m working on and how I’m going to apply that to the future. This is too much work. How do I tactically propose that I want to move to a different team/role?
Sounds like they want to work through it with you. Weekly 1:1s aren’t atypical. Imposter syndrome is typical. Dig in and get at it!
