Yes, everything. All e-mails are stored, so there is no reason to re-document those.I use the approach that if I needed to testify in court about what we did and when, I would be able to rely on this, because it's all I have.
So Salesforce seems to be the CRM of choice! My bd uses and I looked at others however I cannot pull everything I need from Salesforce to properly import into my own CRM. Was a bit disappointing....
Since I know you are sort of a process "Ninja", here's a question. Do you document everything on the fly, or at the end of the day? I have tried it both ways. Both have pros and cons (to me).
Emails are all stored for me, but I can also BCC to a Salesforce email address if I want it to appear in my notes of the CRM. I do that for most client emails, but not back and forth things, just when there is information I would want in the CRM. I document most of my stuff on the fly, or I will forget it. Except for trades, I document all trades at 3pm each day. Also, when documenting I try and get the important information in, but I don't always got into too much detail. There is a risk of giving not enough information and risk of putting too much information in notes. I think it's a fine line. Luckily, I've never had a complaint, so I can't say how well what I do would work in an arbitration.
Absolutely as you go. I guarantee you will miss stuff if you wait until the end of the day. And it's less efficient. Have their screen open while you address their issues; document; close it, and never think about it until the next action item.
