The hotel has insurance. Ask the GM to file a claim with their insurance company to reimburse you. And please get everything in writing, especially of them admitting guilt.
The points should be on top of the insurance reimbursement for the watch.
One nights only? That is nowhere close to enough..
Points for the mistake plus replace whatever resulted. If not go to Marriott corporate.
Also as others said, file a police report and include the hotels activity. Depending on where it was they could have criminal liability.

At $10k I would assume so. This is gross negligence in security procedures. You will need to provide evidence of the value of the watch though.
In meantime don’t accept anything from them yet unless it’s $ and points for hassle.
If it's an expensive watch then probably talk to a lawyer? If not then talk to the GM of the hotel and ask them to replace the watch. Either way file a police report for the theft. Stay comped is the absolute baseline and maybe covers their blunder but not the outcome of it (stolen property)

Which JW was this? Was this a work trip or personal? If business trip escalate to your travel team for assistance as well

If you booked with a credit card that has some trip coverage, try if they can cover that. Edit: I just searched so credit card travel insurance covers stolen items.
