It depends on the role…I’d think you’d be able to present them as concepts for a startup that sought seed funding. Or polish them to a certain point
The other thing you should also know is that just because they ask for 2 to 3 years experience, doesn't mean it's a hard must have. Hiring managers put out an ask and know that they won't get 💯 of the asks. Apply anyway and try to stand out. Get referrals if you can as those always go a long way.
My suggestion would be to focus on telling a story about the work you did there. What was the ask? How did you work through your research to get to design? Most importantly, what lessons did you learn from the work and how did you address those issues? If you write a solid case study for this experience, it doesn't matter as much that the project or company went under. When hiring for UX, I care much more about your methods, how you think, how you articulate the decisions you've made rather than if what you designed ever actually sees the light of day.
