Will you wear the watch in the meantime? I think it's a cool idea, but if the idea is to give your son something of guaranteed value in the future I'd just invest the money in the market. The value will certainly be greater and he could go buy a watch he really wants with the money.
Also, just thought of this, but you could also invest the cash and when the time comes purchase two pieces? May be neat to buy you and your son matching watches, especially if the rate of return over 18-25 years brings you to a value that could afford both. From the perspective of a father, college graduation is just as much an accomplishment for your son as it will be for you having raised him.

Agreed with the stock market. Invest it and let it grow. I think this is a cool cheap way to get your son a nice car when they are 16 or a nice Rolex for college etc rather than a watch that might hold it’s value but he might not like

Ignoring all of the unsolicited personal finance advice and just assuming you’re already saving for the kid’s education and want to buy a gift that will be sentimental to him in the future, I’d say you should get on the list for a Sub. Time isn’t as much of an issue in this case so not the end of the world if you need to wait a year.
I’d have loved to have grown up seeing my dad wear a watch every day and then having it gifted to me at a milestone (25, grad school, wedding, etc.).
Save a little more for no date Sub for $8,100. Get on that waitlist.

Choose a timeless design. Choose an appropriate size. Choose a robust movement. And choose something leaning more towards “tool” watch with more brushed surfaces than polished, especially if you plan to wear it and pass it down. I’d recommend an Explorer 1 or OP41 (or OP36 if you’ve got a smaller wrist) with silver, black, or blue dial. On a 25 year timeline, most other options in the $7k range are a crap shoot.

Buying a watch is not a sound financial decision for your son at this point. Invest that $7k as others have suggested, it will be a nice sum by the time he goes to college. Unless money isn’t an issue, then buy the watch, enjoy it, and then pass it down.

My boys have an Explorer II and a speedy moon watch waiting for them, they can fight over who gets which one! Each was bought within a few months of their respective births.
I got a Rolex sub date for this very reason. I grew up with kids that got watches and bags that had been passed down multiple times so I wanted to start the tradition as well. Money is money, but there is something romantic about having a family heirloom.
