There are more job openings for Springboot enterprise level apps are preferably written in Java due to its highly robust nature and multi threading capabilities.
Prefer NodeJs for single threaded small scale apps. And just a piece of advice, don't be one of those who learn technologies just because of job opening count...learn it for what it is capable of and where it should be used....
Good companies don't care about tech stack you know right now, rather they focus on fundamentals... Because if someone is fundamentally strong, they can easily learn new tech stack based on project requirements...
This mindset you currently have is a vicious cycle my friend, don't get stuck into it....I've been there, done that.... And it just slows down your progress....
If you already know Java and Python, stay focussed on that and learn the max out of it and give interviews on that only.. There will be a time when you will realise that for a particular type of application you'll need Node or some other technology, then learn it....

What you said is absolutely right. But not all the companies hire candidates based on problem solving skills. They are many companies that hire for specific skillset.
