I'd give up a significant portion of my salary to go back to option 2.
Depends - Besides a better pay, what other growth oppts do you have in Option 1? It might offer a new opportunity that can fulfill you differently, like mentoring others. This could be a segue to a next state in your life like becoming a professor on the side, etc.
Now, it also sounds like you’re in a good place in option 2: creative, well-respected, job sec. how long have you been working there? I would consider option 2 more if I had plans to start my own business in the not-so-distant future
Some good advice I’ve gotten is when taking a new job, think about what you want to do two jobs from now. Will this new job get you there? What are your priorities? Are you happy where you are now?

Depends on if you prioritize money over happiness and job satisfaction.
Will the hours be better at the new shop? If yes, and it’s the classic “boring well-paid job with work life balance vs. exciting low paid job that dominates your life” conundrum, it’s just about what you want in life. Do you want your job to fulfill you at the expense of the life outside it, or do you want a full life outside of work and are willing to sacrifice your career happiness?
And before anyone yells at me, I’m sure there are jobs that fulfill you but also pay well and have good hours, and I’m happy if you’ve got one, but goddamn they are hard to find.

How long do you want to work?
At least another 20 years. I like work. I find it fulfilling. But I also think I should be earning more and am not being fully utilized at my current spot.
