How fortunate to have a boss who enthusiastically set you up for success.
Who have you been reporting to while your boss has been on leave? Perhaps talk to them about how you’ve enjoyed the role, that you have done well and wouldn’t want to go back to your role, and would be open to similar opportunities. I wouldn’t aim for your boss’ job, but perhaps same level type role but somewhere else in the organization.

Please do not be one of those people who takes maternity cover and then tries to poach the role.
Give her her stuff back.
By natural evolvement of events when she comes back and sees the change, her boss may offer her a move to something else. As for you I would continue working with passion and really ensure that the team vouches for me. When the time is right I would bring it to the attention of the right person. Has this time come yet? Have you really build a solid ground to pretend the job? Is the team really behind you? Are the results business impactful?
Give her sometime and space. Babies change things. I’m sure she will come back and thrive.
Talk to her boss about your desire for her role and see if they can find a mutual alternative for your boss. Mat leave was a natural time for a career pi or for myself. But if she wants it back she’s sort of entitled to it. Get creative.
Assuming your new boss will be wanting more time with her new baby, when she comes back I think you should be honest with her about how you've thrived and how it's given you new challenges and goals to work towards. You should give her job back to her but also let her know that you are more than happy to continue on with some of the projects, especially those that might suffer from a continuity standpoint. Name specific projects or responsibilities, so it's concrete and not an open offer for help. She might appreciate that she can rely on you so she can have time and flexibility to be there for her kid.
I would try to read the scenario imagining that if I got sick and stay months away on treatment and the deal was being covered, I would be very upset if someone took my job. Said that, this is something to discuss with her first, in last case with who you are reporting to.
