I would say, "I think you might change your tune when you see the skills and expertise that goes into being a veterinarian. You don't have to agree with me, but I'd be happy to show you what I do when I remove Special's tumor."
If I had a penny for how often I've been told the same... Anyway, I don't think the skillset is respected more or less, but the responsibilities that fall on a doctor dealing with human patients are much greater. Human life is held in much higher regard than animal life, and as such, the consequences of mistakes or complications are vastly more severe.
One reason may be that vets euthanize a lot more of their patients. It gives people the impression that you're not as skilled. Obviously not an accurate impression.
People generally view animal health problems as simple because they aren't even aware of their subtle health problems. We tend to treat only the major issues, usually at the end of their life. Beyond that, we just euthanize them when it becomes too expensive, or they are in too much pain. I can see why they may not consider us as actual doctors.
